Beta-lactoglobulin is a protein belonging to the lipocalin family and is the main protein from bovine whey It has long been considered the major allergen due to its absence in the human milk. The biological function of lactoglobulin is not clear; however, this protein is probably involved in the transport of hydrophobic ligands such as fatty acids and retinoids.
